NEBBIOLO D’ALBA DOC

Nebbiolo is the most cultivated wine in the Langhe, lands that have always been suited to this particular variety. With characteristic aromatic notes and an intense ruby red color, it has a delicate bouquet reminiscent of violets and raspberries. A well-structured and elegant wine, always perfect in any occasion.

Food pairings: perfect with any kind of meat: roasted red, braised, grilled or stewed and also with white meat. Also pairs well with pasta and rice.

Harvest: first weeks of October. Pressing, picking the wood from the bunches of grapes; fermentation, in big tanks with skins and selected yeasts, at controlled temperature, never over 25°C, till the complete transformation of the natural sugars. Frequently poured off (3 to 4 times) from November to March, to favour the natural decantation of the skins. Aged at least one year in big oak barrels, then further refinement in small barrels. After filtration, bottling of the Nebbiolo wine. Recommended consumption one year after the harvest; good vintages allow to consume it even for longer time.

The grapes of the highest quality produced by this vine are suitable for producing the so-called "noble" wines, that is, those characterized by a great body and a longer duration. Wines made from 100% Nebbiolo grapes are Barbaresco, Barolo, Nebbiolo d'Alba and Carema. The first historical references that testify to its presence in Piedmont and, in particular, in the Asti and Langhe date back to the thirteenth century.
