RUSTICHETTO WHITE PARTIALLY FERMENTED MUST

Brilliant straw yellow color. It is a white wine with a musky and delicate aroma. It offers fruity and sweet aromas, leaving pleasant memories on the palate. Thanks to its low alcohol, it's easy to drink and combine with many types of food.

Food Pairings: dry desserts, cakes, fresh fruit, baked desserts, fruit salads, biscuits, fruit pies. For a new experience, also try it with salty foods such as cheeses and cured meats.

Harvest: end of August, beginning of September. Crushing without de-stemming and soft pressure, in pneumatic presses, to avoid damages of the wooden part of the grapes, which could bring some unwanted components to the wine. Refrigeration of the must at 6 to 8°C, to block any beginning of fermentation and to favour the natural decantation of the skins. Later on, another refrigeration, bringing down temperature at 0°C, to definitively block the fermentation. The must, maintained sweet, is stocked in big inox tanks, in a refrigerated area; with this procedure, its characteristic bouquet is preserved till consumption.

Throughout the year, following needs, the must can be taken from the refrigerated area and put to ferment in airtight tanks, where it develops carbon dioxide, (which causes the special foam and the fine aroma). Better if drunk young.
