Sparkling wine with a strong liveliness and freshness that releases hints of violets, raspberries and jams. With a garnet red color and purple reflections, it is ideal to accompany rich and hearty meals.

Food pairings: Delicate roasted meat, white meat, grilled and stewed meat, fresh cheese, fish soups, savoury fish, boiled vegetables, pasta with sauce or butter, risotto.

Harvest: end September. Pressing and removal of wooden parts of the bunches, fermentation in big containers at controlled temperature, in presence of skins and seeds till the complete evolution of the natural sugar of the grapes. Natural decanting of the lees and storage in suitable containers to guarantee a correct maturation of the wine. The freshness and effervescence of this wine are the result of a second fermentation in big airtight containers (autoclaves) after the inoculation of selected yeasts; it results effervescent, fresh, lively and fruity. Bottling, after sterile filtration, at the temperature of the cellar.

Advisable to consume it within 2 years.
