PIEMONTE DOC BRACHETTO SPUMANTE

Sparkling and refreshing bubbles with a scent of rose and red fruits. The sweet, soft and delicate taste explodes on the palate leaving a delightful and pleasant sensation. Ideal to accompany desserts, to toast in moments of celebration and as a fresh aperitif in summer time.

Harvest: end of August, beginning of September. Crushing without de-stemming, maceration, and soft pressure in pneumatic presses, to avoid damages of the wooden part of the cluster, which could bring some unwanted components to the wine. Refrigeration of the must to block any beginning of fermentation and to favour the natural decantation of the skins. Then, another refrigeration, bringing down the temperature at 0°C to definitively block the fermentation. Must, conserved sweet, is stocked in big inox tanks, in a refrigerated area; with this procedure, aromatic bouquet is preserved till the consumption. In any period of the year, following needs, the must can be taken from the refrigerated storage tanks and put to ferment in airtight tanks, where following the inoculation of selected yeasts, carbon dioxide, responsible for the foam, develops, and its potential fresh and typical bouquet is released. The bottling in special bottles (4-5 bar pression resistant) is made by means of isobaric fillers; in addition, cork is secured with a wire-hood. To be consumed within 3 years.
