CONTESSA DI CASTIGLIONE BARBARESCO DOCG

A strong, elegant and majestic wine, great to enjoy with company but meditative when savored alone. Made from pure Nebbiolo grapes with an intense and dense bouquet, its full and persistent aroma has hints of violets and spices. It lends itself well to bottle aging for a few years, up to around 10 years.

Food pairings: Ideal with aged cheeses, game, delicate roasts and red meats.

Grape Variety Nebbiolo – Michet, Lampia, Rosé sub-varieties.
Colour Garnet red with orange highlights.
Bouquet Eternal, intense, pleasant, hint of violet.
Taste Dry, full, robust, tannic and velvety.
Alcoholic content Minimum 13% vol.
Serving temperature 18-20° C.

Harvest: first two weeks of October.

Pressure (picking the wood from bunches); fermentation in big tanks, with selected yeasts and with grape skins, till the natural transformation of the sugar at controlled temperature. Frequently poured off (3 to 4 times) to favour the decantation of the skins. Aging for at least 26 months, of which at least 9 in wooden barrels. Bottling, after filtration, at cellar temperature. Consumption is recommended from the third year on. Good vintages allow to consume it even after the fifth year. In fact, it is common to drink excellent “Barbaresco” even after 10 years.
