A fresh and light Sparkling wine with a fine aromatic bouquet. A rose wine characterized by a light balanced sweetness which makes it perfect for fresh moments.
Food pairings: Aperitifs, sandwiches, starters, pasta with sauces, risottos, delicate meat based dishes, fish soups, savoury fish, vegetables based dishes and other dishes typical of Mediterranean cuisine. To be enjoyed also with fresh fruit, fruit in syrup, wood berries.

Tasting notes
Harvest: between August and September. Crushing without destemming, maceration and soft pressing of red and white berried grapes, in pneumatic presses to avoid the breaking of the woody part of the bunch (stalk), which could bring unwanted components to the wine.
Natural decantation of the skins. Then, selected yeasts are put into the must, for a correct fermentation at controlled temperature. With this procedure, its floral and fruity characteristics are preserved. After fermentation, filtration and storage of the base white wine in suitable containers.
The wine is put in airtight tanks (autoclaves) where, adding selected yeasts, the second fermentation takes place, developing carbon dioxide, which gives to the wine the foam, and its fresh and typical bouquet is released. Before bottling, a special liqueur is added to characterize our extra dry sparkling wine.
Bottling, by using isobaric fillers, in special bottles (resistant to 4-5 bar pressure); cork is secured with a wire hood. Consumption recommended within 2 years.
