RUSTICHETTO MOSTO PARZIALMENTE FERMENTATO BIANCO
Rustichetto - White wines
- Variety: aromatic white grapes and Muscat.
- Colour: pale straw yellow.
- Bouquet: distinctive musk notes, delicate.
- Taste: sweet, aromatic, fruity.
- Alcoholic content: 4,5% vol.
- Serving temperature: 6-8 °C.
- Content: 75 cl.
Harvest: beginning of September. Soft pressure, without taking away the wood from the grapes, in pneumatic presses, to avoid damages of the wooden part of the grapes, which could bring some unwanted components to the wine. Refrigeration of the must at 6 to 8°C, to block any beginning of fermentation and to favour the natural decantation of the skins. Later on, another refrigeration, bringing down temperature at 0°C, to definitively block the fermentation. The must, maintained sweet, is stocked in big inox tanks, in a refrigerated area; with this procedure, its characteristic bouquet is preserved till consumption.
During every period of the year, following needs, the must can be taken from the refrigerated area and put to ferment in airtight tanks, where it develops carbon dioxide, (which causes the special foam and the fine aroma). Best drunk young.
