Harvest: first half September, with hand made selection of the grapes, removal of damaged or botrytised grapes, when necessary.
Soft pressing, without picking the wood from bunches, by using pneumatic presses to avoid damages to the wooden part of the grapes, which could give some unwanted flavours to the wine. Refrigeration of the must at 6 to 8°C to stop any kind of fermentation and to favour the natural decantation of the skins. Then, selected yeasts are put into the must, already cleaned, for a correct fermentation at 16 to 20°C. With this procedure, its fruity characteristics are preserved. After fermentation, filtration and storage in big stainless steel tanks. Bottling in late winter or in spring, after filtration. Recommended consumption within 2 years; however, some good vintages allow later consumption.
