ALTEFRANGE CORTESE ALTO MONFERRATO DOC
Altefrange - White wines
- Variety: white Cortese grapes.
- Colour: straw yellow with greenish tones.
- Bouquet: delicate flowers and fresh fruit.
- Taste: supple, fresh, well balanced.
- Alcoholic content: minimum 11% vol.
- Serving temperature: 8-10 °C.
- Content: 75 cl.
Harvest: mid September, with hand made selection of the grapes, removal of the damaged or botrytised grapes, when necessary. Soft pressing, without picking the wood from the bunches, by using pneumatic presses to avoid damages to the wooden part of the grapes, which could bring unwanted components to the wine. Refrigeration of the must at 6 to 8°C to block any beginning of fermentation and to favour the natural decantation of the skins. Then, selected yeasts are put into the (previously cleaned) must for a correct fermentation at 16 to 20°C. This procedure allows preserving all fruity characteristics. At the end of fermentation, filtration and stockage in big stainless steel tanks. After sterile filtration, bottling in late winter or in spring. Consumption is suggested within 2 years; however, some good vintages allow later consumption.
