CONTESSA DI CASTIGLIONE EXTRA DRY ROSÉ
Contessa di Castiglione - Sparkling
- Grape variety: Blend of grapes from white and red varieties (Glera, Chardonnay, Garganega, Barbera, ecc).
- Colour: soft and bright pink.
- Bouquet: aromatic, delicate, characteristic.
- Taste: balanced, fresh, savoury, and supple.
- Alcoholic content: 11% vol.
- Serving temperature: 6-8 °C
- Contents: 75 cl.

Pressing without removal of grapes from the stalks and soft pressure in pneumatic presses to avoid the breakage of the wooden part of grape (grape stalk), that could bring unwished components to the wine. Refrigeration of the most at 6-8°C to prevent any start of fermentation and facilitate the natural decanting of the lees. Selected yeasts are injected in the clean must for correct fermentation at the temperature of 16-20°C. In that way the floral notes and the characteristics of the grapes will be kept. Filtration at the end of the fermentation and conservation in stainless steel tanks.
The wine is sent to the fermentation in tight tanks (autoclaves) where fermenting it develops carbonic anhydrides, responsible for the foam and gives off its aromatic and fresh bouquet.
The bottling is made through isobaric fillers, in bottles suitable to undergo the pressure of 4-5 bars; the cork is secured by means of a metal wire-hood.
Consumption recommended within 2 years.
