RUSTICHETTO MOSTO PARZIALMENTE FERMENTATO ROSSO
Rustichetto - Red wines

- Serving temperature: 12-14 °C.
- Content: 75 cl.
Harvest time: mid September. Pressing without picking the wood from the bunch and soft pressing with pneumatic presses to avoid the breakage of the wood, which could give the wine unwanted components. Refrigeration of the must at 6 to 8°C to prevent the fermentation from starting and help the natural decantation of the lees. Later on refrigeration bringing the temperature down to 0°C to block the fermentation definitively since the must requires to be maintained sweet and stored in big stainless steel tanks closed in refrigerated cell, in that way the aromatic fragrance is preserved till consumption. This phase can
happen in any period of the year according to the needs. The must is taken from the refrigerating cell and sent to fermentation in airtight tanks (autoclaves) where with the fermentation it develops carbon dioxide causing the formation of foam and the expression of its typical aroma.
