- Colour: garnet red with purple nuances.
- Bouquet: wine scent with hints of violets, raspberries and jams.
- Taste: savoury, rich, lively.
- Alcoholic content: minimum 12% vol.
- Serving temperature: 14-16 °C.
- Content: 75 cl. – 1,5 l.
Harvest: end September. Pressing and removal of wooden parts of the bunches, fermentation in big containers at controlled temperature not over 25°C, in presence of skins and seeds till the complete evolution of the natural sugar of the grapes. Frequently poured-off from October to March to favour the natural decanting of the lees.
The storage in big stainless steel tanks guarantees a correct maturation of the wine. The freshness and effervescence of this wine are the result of a second fermentation in big airtight containers (autoclaves) after the inoculation of selected yeasts; it results effervescent, fresh, lively and fruity. Bottling, after sterile filtration, at the temperature of the cellar from late winter on.
Advisable to consume it within 2 years.
